Chicken cracker with betel leaf, smoked river trout, green guava and peanut relish

Crisp salted barramundi salad with caramelised cashew nahm jim

Green curry with coconut chicken, snake beans, baby corn and Thai basil

Stir-fried snow peas and Siamese watercress

Black sticky rice with young coconut, caramelised pineapple and passionfruit sorbet
